Swapping out Fusion Drive HDD for SSD
Yes, you can do that. But usually, the SSD part of a (former) fusion drive is way too small for that to make sense (32 to 128GB). These sizes might be enough for the system to run but you have to remember the system needs space for cache and stuff. My suggestion: Would be better you buy an SSD like

Anyone else experiencing frequent framedrops like these?

6800 is not a high end GPU. It's 2 generations old Mid tier. The 11500 is also a low tier chip. The 850w psu is way oversized. The ram is anemic and the ssd is the cheepest Samsung had to offer at that time. Overall, solid entry level beginner PC that I would never spec together as a new build. And

You may be interested in Samsung 970 EVO Plus, WD Blue SN570, or Kingston NV2. Any of the Gen3 NVMe drives will work well, as they are all fast and quite easy to find when compared to Crucial. Just select the one that is the cheapest for you.
