Had the Sette 270 for 2,5 years. It's as louad as a jet engine and your neighours will despise you. Get a bit of aluminum butyl insulation material to clad the plastic parts from the inside to dampen things a bit. Nice! Check out the Baratza website I had the 30 and you can get the upgrade to dial in. Called: Adjustment Assembly for Sette 270 and Sette 270Wi. (I needed the shims too.)

Congrats on your Sette 270! I got a used 270 a couple months ago too and had similar questions. I single does my beans and programmed my top button for 10 seconds. For 18g at a grind size of about 5 (no shims) it takes around 7 seconds, but i just let the full 10 seconds run in case any beans trickl

I’m a huge fan of the baratza Sette 270 wi. So much ability to dial up or down, add the shims and you have a whole additional level of fine. It is however quite loud.

Consider replacing your Sette's grind adjuster with the one from the Sette 270 with micro-adjustments. You can buy it from Baratza for around $100. That will solve your Settie's biggest problem which is its overly large step size.
