I only know what you’ve told me so based on that I’m making some guesses: The project you’re in maybe isn’t so modestly sized. Or maybe you’re running too many plugins. Everyone thinks 10 plugins per track on a 50 track session is normal. If you need all that then it’s time to start freezing tracks.

Mac pro (2019) still good for composing/music production?

I'd recommend taking the $1000-$1500 and throwing it at a Mac Mini M4 Pro. The only real advantages the Mac Pro 2019 will offer is at the absolute extreme ends for RAM usage and tracks (feature length film scores etc).
