I went with Samsung 990 evo plus 1tb for the boot drive, and secondary games drive WD_BLACK SN850X. Why? Has high speed, and onboard DRAM. Crucial T500 and Lexar NM790 are also equally good

It's good, yes, but I feel you could save lots without losing much if any noticeable gaming performance. You could get the B850 version of that board, I personally use the X870 version but I used the b850 for a friend and it's great. You could downgrade the ssd if you don't need those extreme speeds

I can’t find any brand new pcie 3.0 drives, the one other drive that I’ve found are pcie 4.0: p310 (£140) and 990 evo plus(£125). But these options don’t come with dram, which even with limited speeds, may provide better performance when running vms. So I’m still leaning more towards the t500.
