Why are Global knives hated on so much? Is the quality of the knives really that bad?
Makes sense. I personally wouldnt pah MSRP for a global. I bought a 3 piece set for 110 USD on the official global store including the G-2, GS-5, and GS-61. I thought 36 USD per knife seemed very reasonable.

OP, you are describing the Global G-2. Excellent Japanese workhorse used in restaurants around the world. It’s the chef knife St. Anthony Bourdain recommends for the use case you describe.
