What is your budget? Mercer, Victorinox, Tojiro (Fujitora is the same brand), and Global are all reliable, quality knives. Mercer is the generic culinary school knife. The Global G-2 is the "Anthony Bourdain" knife. Victorinox and Tojiro just have a reputation for being high quality and fair prices.

Fellas, I caved and bought a Global
I have a G-2 and it gets a ton of use in my house. 17 year old teenage daughters knife of choice off the rack. Bit prone to chipping but sharpens easily, good edge retention. Great knife for good performance without worrying about who is using it, since most people treat knives like shit. Global is
