I think you will need an NVMe SSD to play PS5 games. There is a slot available in the PS that is really easy to plug in the SSD. You can get this as I recently got it and this is a reliable brand as well. WD SN7100 I got it for 5.3k in Amazon Sale using CC offer this year so if you can wait this is

zfs mirror (or raidz1 2disk vdev is an option on latest version i believe) the intels for appdata. 28tb for array, xfs/zfs wd sn7100, cache, xfs/zfs, match array. ditch the 250/500 gb trash ssds, dont even have dram, terrible iops and read/writes. If you can up the budget abit more I would go for the 9700x bundle for $899 and the 5070ti bundle. Between 9070xt and 5070ti I would 100% recommend th 5070ti over the 9070xt just because overall the 5070ti features will will give much more headrooms to play with your game settings for more demanding
