What specifically draws you to the UDM SE? If you’re just powering POE cameras that’s a good option, although the dedicated UNR Instant or UNVR are both solid options. FYI the entire UDM lineup is dated and due for a refresh. Most here on this Reddit would recommend the UCG Fiber.

CGF does run Protect. The big reason people are suggesting the UDM-SE is because it can generate 180W of POE. It's also a far more mature and stable product. In general consider: Aftermarket half-size server racks. They can be had for like 150€ on average. It is the most tedious job in the planet to migrate from one rack to a new rack. And you can also run non networking gear if you get full lenght one, so you can put your servers also there. Dont forget
