Im having trouble selecting my first knife
I've had my Tojiro DP Gyuto (240mm) for ~9 years now. It's a fantastic everyday knife that can take a lot of abuse and is very easy to care for. My wife does not take care of our knives well at all and there are only two, very tiny, nicks in the blade.

Is there a point where a knife simply isn’t worth sharpening?
What brand knife is that, imo some knives are so cheaply made with trash steel they aren't necessarily worth the effort. I'd practice sharpening on a decent quality knife you already own, and then buy a basic, but high quality japanese gyuto or German chef knife once you've mastered the basics of sh
