I went from Synology to Unraid, and it's been great. (Synology had some drama where at one point they said people will need to use their branded more expensive drives and then walked it back). Since you said You have about 7TB I would plan to have around 14TB or more of storage to have enough space

I’ve been using a Terramaster system (F4-423 then F6-424 Max) as well as a D5-300 expansion with zero issues since switching from Synology 4 years ago. The few questions I’ve asked on the forum have been answered within a day and sorted me.

The release time for Terramaster's new products is quite random. Given the general increase in hardware costs, if the F6-424 Max already meets your needs, I think it would be a good choice to go ahead and purchase it.

I’m new to nas etc so the second half of what you’ve written is like Greek to me, however I just purchased a Terramaster f6-424 and it seems to me that the three things you’re looking for are present. Btrfs support. Support for different size disks concurrently, and ability to add more, larger disks

I able to saturate a 10G network with rather inexpensive consumer grade hardware (Terramaster F6-424) running samba on TrueNAS scale. It may not be comparable, but I would find it very surprising if you would not be able to take TN to much greater speeds with professional hardware.

2x Terramaster (F4-424 Pro and F6-424 with lots of docker containers and running an array of all disks each) running on 7.14 almost flawlessly upgraded to 7.2.1. I only need to remove the /boot/config/dashboard_setting.json to get the dashboard to three columns.
