What’s the best nas I could get as a beginner?
Synology DS425+. I have one and it works great for what I need. I installed 4x 12TB Seagate Ironwolf HDDs, and I use it for Time Machine backups, Plex, and surveillance cameras footage for 8 Eufy cams.

I’ve used Synology since 2011 or so with Macs; they work perfectly. I would strongly recommend them - easy to use, reasonably fast for what they are, and lots of flexibility in them. Synology DS425+ Just a quick friendly reminder that Synology very recently attempted to lock down their ecosystem to "approved" HDDs sold directly through them and reneged only after intense backlash. I have no doubt they will attempt this again.

Looking for a NAS for a Plex/Jellyfin server
I run Jellyfin on my Synology DS920+ NAS. IMO, only Synology's plus series of NAS devices (with a GPU) are suitable for a consumer grade Jellyfin server. Among the latest models, only the DS425+ has the GPU needed for Jellyfin hardware transcoding - - that's probably the NAS I'd get if I bought one
