What are good cameras for minimal rolling shutter for automotive and fast paced action?

If you're already in the Sony ecosystem, why not just get an A9 III? It's a global shutter and it will work with all of the glass you already use on the A1 and I'm assuming it has fantastic autofocus like the rest of Sony's stuff. It's expensive, but not really any more so than an A1 II or Komodo-X.

Black Skimmer at Sunrise

Sony A1 II paired with the 400-800 G @ 400 f/6.3 iso 640 1/4000, it's a hell of a setup, only had the lens for a couple of weeks but it's becoming my favorite, definitely sharper than the 200-600!
