Grind size always changing

Too much output: grind size vs stopping output flow
I think I checked that scale but it was too big, so I ended up with Maestri House Rechargeable Espresso Scale which fits perfectly. So my question: why keep grinding finer rather than just stopping the output when it hits 36g? That's what I do. I am doing ristretto with 1:1 ratio, so I would stop it

Ouch! Don't worry about the grind size hit matching your old one, they are set up by hand in the factory, some shimmed, some not. What intrigued me is the fact you're still using Barista Assist. Defective Luxe Cafe Premier?
First, you're okay, you'll never blow up the machine, but I know what you mean. I am very surprised that it might be suggesting 8 for an Over Ice drink, my 701 was always in the 20's for n over ice. You say you are only 24oz, the machine can only go up to 18oz, no? You only tamp for 16-18oz setting,

Ah, thanks for that last bit of info. Barista Assist is just that, an assistant, not Grind Size Almighty. My personal opinion, go into Additional Settings menu and turn it off, it's caused more problems than anything else. Change the grind size to get the output you want. Don't let the machine ruin

Ninja 601 never good espresso quality
I don't know the coffee's of which you speak, but is it possible you're water is too hot, a chocolate taste often comes from darker Roast's which requires water temperature set to Lo.
