Bianca is much easier to use than a Gaggia Classic Pro. Start by reading the instruction manual. That will tell you what the knobs and buttons do. Got an espresso machine five years ago and never went back. Gaggia Classic Pro, I can open it up and replace parts as needed. Thing will last me as long as spares are stocked somewhere.

What can $999 get you in your respective hobby?

A pretty nice espresso machine set up. Really the grinder is what’s most important. Getting something like a Gaggia Classic Pro (got mine used for around $400 taxed and shipped) and a Turin grinder (~$250-$400) will leave you with roughly $200 for additional accessories - a PID controller for the GC

Gift for medical student

This is what my husband bought to help himself through residency. We landed with a gaggia classic pro and it’s still going almost 10 years later. We’ve saved a lot of money on lattes haha. A bit of a learning curve but a fun hobby in a way.

Shot Pulling Nearly all Foam [Gaggia Classic]

Defintiely don’t use a pressurized basket with a bottomless portafilter. That will improve the issue but definitely get a better grinder. When I first bought my Gaggia classic pro and had a cheap Amazon grinder I couldn’t get a good pull till I upgraded grinders. DF64 is a good pairing
