Can someone just tell me what to buy for my fiancee? Budget is unknown but lets say [$500]+ ish?
The best bang for buck entry-level gear, IMO, is the Breville Bambino ($250) and DF54 ($250). Highly recommend a separate grinder as you can then upgrade one or the other as you like. You’ll also want a basic 0.1g scale, e.g. MiiCoffee Nano ($35).

Best Budget Grinder [$200]
Maybe not preference, but from what I've gathered from my recent purchase is that you can get an S-tier manual grinder for the price of a C-tier or D-tier electric grinder And the cost of entry is much lower. The cheapest reliable electric grinder option seems to be a Baratza Encore ESP ($200 USD),

Shots always pulling sour or bitter [Breville Bambino]

Bambino Plus found, now need grinder [$500]
I can't recommend something in the Eureka Mignon line enough. I have a Libra, but many below grind the same. I suspect the grinder is mostly the issue with consistency. And flavor. EspressOutlet treated me well. MiiCoffee is another popular source for the DF54. Also look at the Encore ESP and the new ESP Pro and the new Shardor all metal 64mm flat grinder at about $250. Great choices now compared to when I started just about 3 years ago. Pax

Espresso Machine [$400]
As others are saying, the grinder is actually more important than the machine. There are super cheap ($150) espresso machines all over Amazon that will do well enough.
