Honestly I wouldn't even spend that much. for $500 the new Mahlkonig x64 sd is an amazing grinder for espresso and pour over. Also a profile similar to what you speak of. I think you would prefer that above the z1 for taste and work flow.

If it was me I would look at the new Mahllkonig x64 sd with brew burrs in it. I use to recommend the opus but so many people complain I stopped. The ode is a really good grinder. There also might be a femobook in that price range.

Check out the Mahlkönig x64 SD, Eureka SD, Zero (stepless, flat burr). For your use, I would personally go with a stepped grinder capable of single dosing, which the ESP does well.
