Option O was made in China from the start and they built their reputation on these Chinese made high quality feeling grinders from the start, they are a good example. Honestly I wouldn't even spend that much. for $500 the new Mahlkonig x64 sd is an amazing grinder for espresso and pour over. Also a profile similar to what you speak of. I think you would prefer that above the z1 for taste and work flow.

This is in my wishlist. They made Mahlkonig's x64 sd pretty useless, although it has better stock burrs.
