Need grinder advice!
Honestly I wouldn't even spend that much. for $500 the new Mahlkonig x64 sd is an amazing grinder for espresso and pour over. Also a profile similar to what you speak of. I think you would prefer that above the z1 for taste and work flow.

This is in my wishlist. They made Mahlkonig's x64 sd pretty useless, although it has better stock burrs.

My Experience Buying a Niche Zero
I was between the Niche, Mahlkonig, and one of the Eureka models like the Specialita but I wasn’t a fan of the Specialita hopper so ended up not getting it. Looking for a grinder upgrade [600 eur]
i like the new mahlkonig x64 SD its in €500 range, 64mm replaceable burrs. Hopper or with bellows. I would buy that today. but there are like 10 other fantastic options. heck even df64 is still great and cheap.

Niche Zero or Alternative?
