The New Gaggia Classic Up- Thoughts?

A thoughtfully executed product that addresses most (if not all) of the shortcomings of previous Gaggia Classic models. Overall it looks like an intentional and meaningful evolution rather than some hastily tacked on features.

What espresso machine did you start on, and would you recommend it to a beginner today?

Just got a Gaggia Classic a few months ago, so still learning lots but I think I’m doing ok. I’ve been temp surfing with it and that’s made wonders for consistency, I want to get one of the PID mods for it soon tho lol.

Best espresso machine that actually holds up over time? [$700]

That’s the Gaggia e24. Its design predecessors have lasted decades. I once pulled a very abused 20 year old Gaggia Classic from a thrift store and I just needed to clean and descale it and it was running like new.

Profitec Go pressure profile?

You’re diverting the flow of water out the steam wand, so it’s like controlling pressure by adjusting the flow rate. I don’t think it’s bad for your machine, and people do it on the Gaggia Classic as well.
