Which coffee grind is best for gaggia classic?

Your gaggia classic is an espresso machine... Why would you not buy espresso grind? To be honest you are better off getting your own grinder and doing it yourself. I would be amazed if it was at the right coarseness for your particular machine.

Is Grinder over Machine still true?

I can only emphasize on balance. In my case I worked myself up to a DF64 on a Sage barista express, had constantly issues with consistency. I then bought a used Gaggia classic, restored it and it made a HUGE difference. Now I'm happy and wondering for how long 😅

Trying to use the pressurized filter, insanely fast to 36g.

Do not use the pressurized basket. It adds artificial resistance that should be coming from the coffee puck and not the basket. Use the regular double shot basket instead. What espresso machine did you start on, and would you recommend it to a beginner today?

Just got a Gaggia Classic a few months ago, so still learning lots but I think I’m doing ok. I’ve been temp surfing with it and that’s made wonders for consistency, I want to get one of the PID mods for it soon tho lol.

Best espresso machine that actually holds up over time? [$700]

That’s the Gaggia e24. Its design predecessors have lasted decades. I once pulled a very abused 20 year old Gaggia Classic from a thrift store and I just needed to clean and descale it and it was running like new.
