+1 on the already recommended Wüsthof Ikon. You might want to get a Classic Ikon though. Exact same blade, but POM (plastic) handle instead of wood. So even more carefree. Any good Black Friday deals that I should jump on? Saw the Wusthof 8" + 4" paring going for 120 on Amazon, but I don't like the bolster. Context: noob that has been using the Victorinox Fibrox 8" for 6-7 years now.

As an owner of both, the Wüsthof is not an upgrade to your Victorinox. If you are set on Wüsthof you want the classic Ikon, or Classic Demi-bolster lines. This 210mm Gyuto would be an upgrade

What about wüsthof chef's knife? The one I linked is a chef knife ;) And FYI, the Wüsthof Ikon line is different from the Wüsthof Classic Ikon. It's more expensive, basically because the handle is made of wood. With the Classic Ikon you get the shape and performance of the Ikon but with a lower cost

Have you collected many kitchen gadgets through the years that you never use, they are just put in a drawer and forgotten about ?

My gf likes and buys kitchen gadgets, I'm faster and more accurate with just my trusty Wüsthof Classic Ikon Santoku, so I ignore the gadgets in that one cupboard. I do use the chopper and the V-cutter and the hand blender a few times a year.
