Would these be suitable to setup a very beginners NAS?
You can get a proper NAS for your money, an all in one package if you like. Look for UGREEN NASync DXP4800 Plus or simmilar.

No encryption?
It’s not encrypted, and it’s currently not possible to encrypt it only option you have is to use the vault app - it is on their roadmap but looks like its low priority as its been pushed back from last year it seems, the data should be safe otherwise unless someone has physical access to the machine

How to setup Unifi VPN for remote access with iphone using Ugreen NAS app?
I ran into a few quirks using the WiFiMan app to connect back to my Unifi network (see this thread). On my iPhone I had to toggle the tunnel on/off a couple of times and then fully close/open the app once or twice before routing would propagate. That might be something to try in your setup as well.

What’s the trade off?
I just bought a new NAS for home use for photo and file storage. I considered Synology as they have a more complete/mature platform. But I refused to buy with their HDD lock-in. And their technology seems dated. Instead I opted for a UGREEN DH4300+. So far (a week in) it works well. I’m just getting
