It’s a rabbit hole, but honestly, it comes down to how much work you want to do. If you want the best drip coffee maker that’ll last a decade, Moccamaster KBGV Select is still the gold standard. I’ve used mine daily for a year the thermal stability (92-96°C) is legit and it’s built like a tank. OXO

Technivorm. E.g., the Moccamaster Coffee Maker. Still looks, tastes, and functions great. First model was 55 or so years ago. Edit: the model I have, the KBG 741, has been in production, largely unchanged, since 1974.

Based on your requirements, a Moccamaster seems like the best fit. Specifically the Optio or the KBGV Select. I agree; Breville has excellent temperature control. However, if you prefer a smoother, more balanced cup, I believe the Moccamaster KBGV Select still wins out.
