What spec would you use for Immich?

Advice on Nas?
If you want to go for a NAS and run Docker/VMs go for Ugreen, much better hardware and you can always customise and install an OS of your choice. Synology used to be good but not anymore also the hardware on the 423 is very old compared to the new Ugreen stuff. Disclaimer: I’m still running a Synolo

Keep the beelink and get a NAS. I have a beelink like yours. The intel chip is awesome at transcoding. I have a synology ds923+ that stores all my media.
