Made the leap to Z today

Well, I get you and in theory I would love a Z7iii... but that's effectively a Z8 without the AA filter with Nikon's current hardware capabilities. I think a Z7iii with something like an Expeed7 processor and fancy AF modes will happen when Expeed8 inside a Z8ii is a thing, otherwise they'd cannibal

I think the biggest problem is the pricing. Technically - many people may/would like Z8/Z9 capabilities with DX sensor, but the price for such camera would be probably somewhere around current Z6III or Z7II. Which would not make much sense for most of people to pay for - financially nor technically.

Zf, Z5II or Z7II?
Z5II and Zf are similar enough that their choice is between better ergonomics and cooler looks. Z7II is if you want 45MP and don't care at all about autofocus. I'd say Z7II + 24-120 F4 makes more sense here, as I don't see any AF or aperture hungry subjects in your list
