ThinkPad P1 Gen 7

Have you actually looked into LPCAMM2 memory? That stuff ins pure unobtainium. Apart from one lone Thinkpad (P1 Gen7) it hasn't been adopted by the industry so far, and there's zero aftermarket availabilty. Even Lenovo won't sell you modules to upgrade as they don't have any. P1 Gen7 would come closest in meeting your requirements. Has two drive slots, upgradeable RAM (theoretically at least, because the LPCAMM2 modules that model introduced are unobtanium in practice, not available anywhere) and a very decent 16" WQXGA (2560x1600) display option. 90Wh battery.
