What espresso setup would be best for us? [~$750 budget]

Considering you're under $750 and need both a grinder and an espresso maker — a breville bambino, a grinder in the $200-$300 range, and then the remainder of the budget on accessories/cleaning supplies/water treatment would probably be the way to go. Trying to use the pressurized filter, insanely fast to 36g.

Do not use the pressurized basket. It adds artificial resistance that should be coming from the coffee puck and not the basket. Use the regular double shot basket instead. Without any bias, with all facts considered, do boiler espresso machines produce better coffee than thermoblock machines?

A 50ml boiler for 40ml shots will do that... GCP was good 15 years ago when there was $400 Gaggia or the much more expensive 4-figure E61 group option. Now we've got loads of good machines to choose from.

Inversely, look at the Gaggia classic pro. Not relatively expensive, but still a lot of money for a machine that you still need to do a bunch of little tricks or a rather costly mod to make sure your water temperature is adequate.

Congrats! You have basically two Gaggia Classic Pro boilers for $70. You could easily mod this or keep it stock and enjoy traditional shots of this. This is a great deal. You should post this up r/gaggiaclassic

Which one is better for mods

The red has an aftermarket low drip tryst. Both are Gaggia Classic Pro and would be same for mods. If you are purchasing used just try to avoid ones with coated aluminum boilers. New E24s all gave the brass boiler - a huge upgrade.

Anyone here gaggiamate their gaggia classic e24 and regret all the fuss?

I have a Gaggia Classic with Gaggimate, the non pro version (IE no pressure profiling). It solves the annoying little problems that I had with my GCP before the change. You get consistent temperature, pre infusion, great steam pressure and if you have Bluetooth scales it stops at your target weight
