bad situation ever! UDMpro wipped itself
If you did not back up your UDM then you are SOL. The AP's are tied to the software configuration, not the hardware itself. You can, for example, back up the config on one UDM, take out the hardware, restore the backup to a completely different UDM, and the AP's and everything adopted in that config

Service has grown progressively worse over one year in rural New York
Im pretty sure this has been a Ubiquiti issue reporting this, you can go to that sub and see this shit all the time lol. I had fiber and my UDM Pro would scream about random errors when there wasnt. That said though, like others mentioned, it could be the hardware (dish etc)

I spoke with someone at Ubiquiti today and got 'unofficial' details that I haven't seen shared yet about the UDM Beast. Priced between $1000 - 2000 (would not share specifics) I have a hard time believing it would be cheaper than the Fortress Gateway since it has the same key SFP28/SFP+ connections
