How are y'all managing your photo libraries?
Did this as well. I got a synology 920+ with two 10TB drives. Have been using them for 3 years. It also doubles as my Plex media server as well. Worth the 700 or so upfront cost. I'll probably add two more 14TB drives at the end of the year.

Looking for a NAS for a Plex/Jellyfin server
I run Jellyfin on my Synology DS920+ NAS. IMO, only Synology's plus series of NAS devices (with a GPU) are suitable for a consumer grade Jellyfin server. Among the latest models, only the DS425+ has the GPU needed for Jellyfin hardware transcoding - - that's probably the NAS I'd get if I bought one

Worth it to use Synology NAS as storage and old PC w/ GPU as main media server?

Plexamp is so darn cool
You do not, you can install the server directly onto the NAS using the Synology DSM. I have a 920+, I've been running it for ~4 years with no issues.
