Imo the FX3 doesn’t generally would make sense in a vacuum but there is competition and Sony has allegedly registered the FX3ii which means it will probably be released soon. I think the biggest pros for the FX3 are lowlight, great autofocus, easy to edit files, full sensor 4k and also compatibility

For your scenario the ZV-E1 would be the obvious choice between these two. I owned both of them and AF and the flip out screen makes the Sony way more convenient. But i also learned to love the BMPCC for its pic quality, handling (UI is 👌🏻) and rigability. Have you considered a Lumix S9? Same sensor

Go with the Sony ZV-E1. Significantly cheaper than FX3/A7S3 (especially if you're willing to buy used). Same sensor with great low light capabilities. AF is supposedly better than those cameras. And you get 4K60 SLog3 in 10 bit. If you're shooting run and gun (which it seems like you are), the ZV-E1

Low light is shockingly as good as FX3 and ZV-E1 up to ISO 12800... ZV-E1

the fx30 is the smarter pick for food work because the super35 sensor gives you more depth of field at similar apertures - easier to keep that whole pan in focus. pair it with the sony 90mm macro or the sigma 18-50 f2.8 for top-down shots. if you want extra pop in those reds and oranges, grab a tiff
