ZV-E10 or ZV-E102
ZV-E10 for pictures as it has a mechanical shutter. The video isn't bad either when you want to use it. ZV-E10 II when you want to do a bit of post processing (wanting to make the video look "cinematic" for example). Yeah, I'd just recommend the ZV-E10 especially at its price point. Personally only

If you're using it primarily for pictures, definitely the ZV-E10. Most of the improvements on the ZV-E10 II are video focused.

Assuming you mean the ZVE10 Mk I, s-log is not worth it. That camera can only record in 8bit, either internally or over HDMI. S-log does not work well in 8bit. Skintones turn to blocky red mush in the grade. It squashes all the colours to the middle of the colour range, but there simply isn’t enough

For talking head stuff, use your phone. You can just get a cheap tripod and get it in place. The only real problem is that you won't be able to see yourself, though there are solutions if you google it. For gaming commentary, it kind of depends. How big is the webcam frame? If it's a tiny rectangle

What lens should I get next?
The Sigma 18-50 is the perfect move for travel. It is super sharp and tiny enough to balance perfectly on the ZV-E10 II.

Will I regret not expanding my budget to buy a a6700?
The R50 and R10 aren't as good as the ZV-E10 II for video. The a6700 is a great, well-rounded, camera. I think you would be better off building a lens selection around it than any other camera here. Pretty much on the same spot. Per my research Sony has the widest range of in-brand and other compatible lens options. And sigma 18-50 is quite solid, though do note that it has no OSS, meaning footage will be quite shaky. Consider the Tamron 17-70mm if you can, same aperture with vibration control
