The one that gets me most is still no variable shutter adjustment for flicker in video. Even the ZV-E10 Mark II has that. It can't be a feature that Sony's gate keeping so I am at a loss there.

For a sony camera that won’t overheat ever just get some FX30s. I use 2 FX3s and 2 FX30s for wedding ceremonies and have never ever had heat issues. You could maybe do ok with the ZVE10ii or something, but I wouldn’t want to risk it.

The ZV E10 II is really not a camera meant for still photography. It lacks a mechanical shutter and only has a flash sync speed of 1/30.
