Need Mini pc Suggestions and help
Been pretty happy with geekoms. Perhaps an a5 (allows for an extra sata ssd) or a5 pro could work, or a higher tier if you need more horsepower. Just watch carefully because some mini pcs have soldered ram that is not upgradeable, or limited nvme slots.

Lack of 2.5" SATA SSD compatibility in all of GMKtec's mini pcs...
There are plenty of mini PCs with 2.5" bays: ZBOX CI337 nano, Geekom A5 2025 version, Beelink SER5, etc... Pretty much every mini PC brand/manufacturer I've looked into has at least a couple of models with 2.5" bays. GMKtec appears to be the only one to have completely deprecated it for some reason.
