I use the workouts on my garmin enduro 3 and it works a treat. I think all watches / devices will struggle with sudden speed changes as it’ll take a short average (3-5 seconds or so) as your speed. I wouldn’t expect the Apple Watch to be much different to the Garmin though when it comes to tracking

Unless you are an elite running on a certified course in elite wave so you can hit the tangents, it’s probably never going to be perfect.
