Yes the problem is the fios router, switch it with a Eero 7 or Ubiquity dream router 7 and voilà, you’ll see how everything will work perfectly. Eero 6 works too, I had your same problem, the router the internet provider gives you is basically trash.

Eero user looking to make the switch to Ubi

As someone with a small home with plaster walls I think your issue is WAY too many access points. I had 2 Eero 6 Pros and the coverage and speed were fantastic throughout the home. Unless you feel like spending money I'd give that a go.
