Difference between these GPU’s?
It might get slightly hotter but that's pretty much it, the performance will be the same, personally I'd go for the Gigabyte since I think it looks better and I like 3-fan GPUs, but if you want to save some money get the ASRock one Btw I took a look at the whole build, I made it $78 cheaper: https:/

Exactly what I did, along with a gigabyte b850 gaming X mobo, corsair rx1000, crucial p510 2tb nvme, phantom spirit se cooler, and a fractal epoch case. Cost me just over $3500aud, give or take. First Pc, wanting a high end 1440p.
I used this MicroCenter bundle for the CPU and mb. It’s the same price as buying them from MSI, so you can decide where you want to buy them. All other parts were sourced from online retailers. Possible bottleneck
Everything seems fairly balanced. If you haven't purchased the SSD (Crucial P510) yet, I would consider something else. Gen 5 drives aren't worth it in most cases and a 2TB Gen 4 for the same money gets you double the storage and won't feel any slower.

Is this good enough Build?
Go for Gen5 SSD. Crucial 1 TB m.2 gen 5 is around 10k. You get 9500 MB/s write speed. https://www.primeabgb.com/online-price-reviews-india/crucial-p510-1tb-pcie-gen5-nvme-2280-m-2-ssd-ct1000p510ssd8/
