I have a similar system: Went with an R9 7900x CPU, rather than an x3D, as I did get an ASrock mobo and they have a bit of a rep for eating x3D CPU's. RTX 5070Ti for PCIe 3.0 PC?
I chose to get a pair of Corsair MP700 Elite 2TB drives. They're PCIe v5 but run at closer to v4 speeds because I was worried about heat. They still do about 5000mbps transfer so better than the Samsung 980 Pro 2TB that I have in my PS5. Both are faster than the native PS5 storage.
