They work amazingly well actually. You probably just bought a crap machine. Pressure and flow of your home water system aren't relevant for an espresso machine. The interior boiler fills up with water while its on to some degree, or you can fill it manually. Espresso machines have their own boilers

What are your experiences with longevity with higher end Oracle machines?

Have a 6 year old Oracle Touch that started to pop our GFCI outlet, likely due to leak. Replaced the orings and steam probes, which did not fix the issue. Seems to be a problem with the steam broiler. Loved the machine so much we replaced it with an Oracle Jet....little bit of a side grade IMO, but

Grounds sticking in portafilter

Looks like my Breville (I have the Oracle Touch). Also, in a review video, they talked about it doing that, and they commented that this hadn't happened to them with other machines. I haven't noticed any issues with shot quality.
