Rocket - overkill for a latte drinker? Budget around [$2k] so but ideally under $1k

Why do so many overspend on an espresso machine not a grinder?
I'm not personally sold on the "must have a $2k grinder" mantra. Yes my dual boiler is $3500. But my Grinder is the Baratza Vario W (dose by weight). A decade ago it was a $500 (canadian) grinder. It's more like $800-900 now. But it stands up. Per James Hoffman comparing it against a $50 grinder vs
