For the price of 3x Beelink Mini Mate's could you not get a 6-bay Flash NAS like the Asustor Flashstor, gen1 or gen2? Has 10gb onboard and proper RAID + CPU. More reliable I would say. The gen1 is very cheap. It won't be 11,000mbs but it will flood the ethernet 10gbe connection nicely.

The one that you list may have some heat issue, note that none of these pre-built nas will give you the x4 lane, pretty much x1 (with 1 slot may be x2). Beelink Me also an option but it may have issue to power all 6 nvme with RAM at once. ASUSTOR FLASHSTOR 6 is another option but it is quite pricey.

With some thing like the Asustor Lockerstor 6 the NVME's are used as cache to speed things up. But you can not really speed up a hard drive. With the Flashstor 6 the SIX NVME's they run at gen 3 speeds , which is plenty quick.Not gen 5 , With the Flashstor 6 you do not buy it for the speed , You buy
