Is this unacceptable?
You will be better putting virgin hub in modem mode and using your own router. I'm on M500 using a Asus ax82u router. This is a speed test taken upstairs with router downstairs.

Mesh or AP, recommendations?
I have two RT-AX82U setup up, one as primary and one via AIMesh. Works swimmingly and in case one goes down, I can use the other as primary router.

Internet speed
iPhones use 2 streams, with a maximum of 433Mbps per stream on AC, for a total of 866Mbps. 1.) No, you can mix and match asus products. If you are going wireless, tri-band (dedicated wireless backhaul) may be better. I also have to add, if the BE82U has different features with the AX82U... you will have to choose which would be the better main router. You may lose some features since they are from different generations.

Random Freezing and Stuck Streams
I am currently running two Asus RT-AX82U via ethernet backhaul in our two story house. I generally recommend Asus as they are the most feature rich routers (no features are hidden behind a paywall) even though their routers are relatively underpowered.
