You're running 3 external monitors, probably all 4K at 180 Hz, on a Mac Mini with a regular M4 chip. This isn't a Mini with an M4 Pro or a Mac Studio with an M4 Max or M3 Ultra.

Is it realistic to use a Mac mini as a “portable” (carrying in a backpack + daily plugging/unplugging)?
I mean that many plug/unplug actions is less than ideal, but I can't say if it will actively harm the mini. If it's shut down each time I don't think there would be any risk involved. One idea would may be to never actually unplug the power cable from the mini (maybe get a very short one), and then

Weird because I have a T7 I use for music production and I’ve been getting slow disk/overload errors in logic on an M4 Pro Mac mini with 24GB ram. That machine is more than capable of what I’m throwing at it and I’ve had 2015 Intel MacBooks and M1 MacBooks work larger projects off the same drive fin

How do you square AI usage against self hosting?
What are you using LLMs for? I just don’t actually find them useful for most of the things I use self-hosted. My one exception is for very limited use of home Assistant voice control, which I use an m4 Mac mini to run a model that’s extremely lite and only really performant enough for basic tasks.

Mac Mini or Studio?
Mac minis are good but once one starts adding lots of RAM the price does hit the Studio. Studio likely has better thermals. It definitely has more ports. I would not have ordered both, with RAM the same I would have just gone with the Studio. 1TB SSD should be plenty for internal but I could see 2TB
