Do you recommend I buy an Acemagic mini PC?
Bad support, cheap parts, known to have pre-installed malware. The issue with a lot of Acemagic/Kamrui/Acemagician miniPCs is that, even if you do a fresh install of Windows, the drivers for the insanely obscure parts like wifi can only be found on obscure chinese websites or forums.

Is there a cheapish mini PC that supports 3x 4K monitors?

No. Although since the malware debacle 2 years ago, CYX manufactured MiniPC Union (Acemagic, Acemagician, Kamrui, NiPoG, etc) haven't been known for build quality or customer service, making them a budget brand akin to TopTon.

Best Bang for the Buck?
Due to build quality & customer service, many CYX manufactured mPCs (Acemagic, Acemagician, Kamrui, NiPoGi, etc) have made poor long-term investments in the past year or so. Having said that, historically, I've been quite fond of the AM06 PRO platform with the exception of the 5500U/5700U versions.
