Does UNAS Pro 8 Support PCIe 5.0?
Honestly I'd likely go for something like WD red. They are decently priced and gen 3x4. WD no longer manufacturers NVMe, they are made by SanDisk, so you could also see what SanDisk has available. Obviously Seagate, is another option. https://www.sandisk.com/en-ap/products/ssd/internal-ssd/wd-red-sn

AOOSTAR WTR MAX - Storage recommendations
Just go with WD Red SN700. They are built for 24x7 operation but are only pcie 3.0x4 but it's more than enough.

Seeking Advice on My TrueNAS Build (Ugreen 4800 Plus NAS Conversion)
Thanks, I did a bit more research and it seems the WD red SN700 (2TB) could be a great match. Especially that the 4800plus is limited to pci gen3 speeds. I just dont see why I'd make that redundant... You mean as in zraid1?
