what is your budget? that cpu is decent, should be able to handle most cards if youre playing at 1440 and up im gonna say 9070xt/5070ti. for drive, any tlc gen4x4 is fine. looks like in aus its the sn770 is the cheapest. for 1tb anyway

Picked up the base Mac Mini

yeah apple's storage pricing is wild. i grabbed a Samsung T7 Shield 1tb for way less and it's been great. thunderbolt enclosures with nvme drives are faster but pricier - the ACASIS 40Gbps enclosure with a WD Black SN770 hits almost internal speeds. just install apps and even some games on it. works

Want to build a PC for my GF - budget around 2500 CAD

If you can up the budget abit more I would go for the 9700x bundle for $899 and the 5070ti bundle. Between 9070xt and 5070ti I would 100% recommend th 5070ti over the 9070xt just because overall the 5070ti features will will give much more headrooms to play with your game settings for more demanding

Need some help for new ssd and storage solutions

990 EVO Plus is solid, but 150 € for 1 TB sounds a bit high now. Check local prices on things like WD Black SN770, Crucial P5 Plus, Kingston KC3000 etc. If any of those are close in price, I’d take the cheaper one with TLC and good warranty. About the Intel 660p: it’s QLC and already at 64% health.
