I have some Wusthof classics that I like. I sharpen them at 15 degrees. My favorite is the 10-inch chef knife. An 8-inch is too short for me. A 9-inch starts getting good. A 12-inch is a little long. I sharpen my 12-inch at 20 degrees because I cut through small bones and it holds an edge better cut

Im at a loss. I've bought countless sets but have never found one with truly sharp pieces. Here desperately looking for recommendations that will slice effortlessly through a tomato like warm butter.

If I sharpen a Wusthof Classic at 15 degrees it will cut paper thin. Probably not as thin as some of the thin Japanese knives but transparent. Good enough for me. I have a picture but I cannot post it. I never use anything that thin anyway. I agree with not buying a set. Buy the knives you need. A 1
