Knife advice

Don't buy a set. Buy an 8 inch Victorinox chefs knife and have change left over for a paring knife and boning knife. $200 is cheap for a set, and you'll have a whole bunch of cheap knives that will never get used, and a couple that will

What does blade quality really mean?

No worries. I'd like to clarify that there's a lot that goes into the price of blades. Reallllly cheap blades could be made of lower quality (often softer) metals but also suffer from inconsistencies in heat treat meaning you never really know what hardness you're getting. Then you have middle of th

Is Wüsthof Classic a good pick for first set of "good" knives?

Buying a set is generally considered a waste of money by knife experts. All the advice I'm about to give comes from the book An Edge In The Kitchen by Chad Ward and from youtubers. Here are the knives you need. Get these in good quality and nothing else: 8in chef knife [$50-150] Serrated bread knife

Best place to buy

America's Test Kitchen prefers Victorinox and Mercer which are both very reasonably priced. The video linked below discusses specific features you may want to consider. Help! This 40-something kitchen disaster is tired of takeout and ready to actually learn how to cook (without burning the house down) 🔥

Start with eggs. Scrambled, then fried, then omelette. Cheap protein and forgiving. Get a decent 8 inch nonstick pan and one good chef's knife. Victorinox makes a solid one for $40 that'll last years. For YouTube, watch Ethan Chlebowski and Adam Ragusea. They explain why things work, not just recipe

Torn between the following

For a western knife in Canada maybe consider the Victorinox 8 inch with rosewood handle (though looks like it might be maple now?) . When I got mine a few years back it was like 90-110 CAD. I have a Japanese Gyuto now as well but the Victorinox has served me well and I still like to use it as a work

new job, extra dull knives

Get your own knives. Start with a victorinox 8 inch chef knife. Very easy to maintain and cheap enough you won’t cry if one of your idiot coworkers messes it up.

“Healthy” Obsession

I found a Victorinox Fibrox 8 inch breaking knife for I think $17. So I bought it. Man that thing was unbelievably sharp right out of the, uh, cardboard sleeve? There was no box or plastic display package. Anyway, it would shave my whole arm in one swipe! It’s a great knife.

UK first proper chef's - Victorinox? Procook Pro X50? Staniforth? Budget up to £70.

The Victorinox that everyone seems to love is the extra broad 20cm with the Fibrox Pro handle. They're about £33 on Amazon at the moment, but pre-Covid you could buy one for £20. The other commonly recommended beginners knife is the 8 inch Mercer Renaissance. At around £40 it's less than half the pr
