AC mesh pro still worth it??

honestly for 45 bucks it's not bad but you're spot on about EOL worries. ubiquiti still supports the AC line but they've been pushing wifi 6 hard. i grabbed a U6 Mesh instead last month and it's been solid with better future proofing. the AC Mesh Pro will probably lose major updates in a year or two

No experience with that personally but a mesh system is likely to have better range than a single ap. If you want unifi you would likely be better served by 2 x u6 mesh. Or a combination of in wall or on wall normal ap and a u6 mesh or u6 mesh and one of the other cloud gateways with WiFi built in.

Aren’t most setups here insanely overkill? Am I missing something?

I have my ubiquity setup covering 3 floors of my 4000 sq ft house, and covering about 1/2 of my almost 30 acre property. Not trying to brag, but there are certainly people who use the gear. I've got a UDM pro, 4 AC mesh pro, a U6 mesh, a U6 Pro, and a couple AC LRs that need to be replaced someday.
