I'd probably put another 24 port patch panel between the UDM-SE and the core switch. Yes, you want an SE for the flexibility, and there are lots of good uses for those ports. In general consider: Aftermarket half-size server racks. They can be had for like 150€ on average. It is the most tedious job in the planet to migrate from one rack to a new rack. And you can also run non networking gear if you get full lenght one, so you can put your servers also there. Dont forget

Have you ever had a Ubiquiti product have a hardware failure? How do you plan for such a contingency?
My UDM-SE died in January, while I was out of town. It's at home so it wasn't a super huge deal (although the websites I host were all down) but my big worry was my wife.
