Is a wifi extender a good option?
A mesh system is the answer, if you can run a cable for back-haul that would be better. I have had really good luck with the TP-Link Deco XE75 Pro 3 pack for a 3 story house.

Is the included AT&T Wi-Fi 6 gateway enough for a 2-story, 2,200 sq ft home?
That equipment is reaching the end of it's productive life. AT&T installer will test out your signal and try to sell you on an extender, but unless it's hardwired with ethernet you're going to have a bad time. Issue is I believe the cost is $25/month which I don't feel is worth it. For $200 you get

Networking Problem (pros only)

Is this mesh placement good? could i make improvements?
TLDR: I would try one unit (green) by itself (unplug red & yellow), see if green is enough to provide coverage to the entire place.
