I can understand your choices, but why rs3? There are a lot of cheaper gimbles, and zv e10 is a very light camera Also, it's debatable, but personally I would go for gh5, which could be found for a reasonable price (depends on the region)

Built in stabilization is excellent on the ZV E10 in my experience. Add a camera cage with a grip and drop the gimbal.

I don't think the FX30 is a good pick for hybrid shooters, it's a video centric camera. You'll miss the mechanical shutter. Check reviews that focus on the FX30 photo capabilities and see if you can deal with the downsides. That said, it'll still be a huge upgrade for video over your ZV-E10.

You might want to spend a little bit more money and get the zv e10 mark 2 since it’s a bit more video focused and has 10 bit 4:2:2 recording and the sensor from the fx30.

Two cameras: Canon R50V Sony ZVE10 Canon has much better video features and is newer than the Sony, but the lens ecosystem in Sony is unparalleled. I would choose the canon here just because my focus is videography. If photography was in my priorities i would choose Sony.
