I can understand your choices, but why rs3? There are a lot of cheaper gimbles, and zv e10 is a very light camera Also, it's debatable, but personally I would go for gh5, which could be found for a reasonable price (depends on the region)

Save up a little longer for a used Sony ZV E10. That basically the industry standard for creators. That’s very close to being in your budget

I don't think the FX30 is a good pick for hybrid shooters, it's a video centric camera. You'll miss the mechanical shutter. Check reviews that focus on the FX30 photo capabilities and see if you can deal with the downsides. That said, it'll still be a huge upgrade for video over your ZV-E10.

You should try some film simulations, using Picture Profile. There is a guy on youtube who made a lot of different simulations for Sony cameras and he has 8 free profiles.
